Eggnog Cheesecake Minis

Ingredients

Base:

¾ cup / The Key Dough One Smart Mix

¼ cup / butter, melted

1 / egg, beaten

 

Filling:

1 (250g) block / cream cheese, room temperature

½ cup / 35% heavy cream

2 / eggs

¼ cup + 2 tbsp / granulated monkfruit sweetener

2 tbsp / dark rum*

¼ tsp / ground nutmeg

¼ tsp / ground cinnamon

Directions

Preheat oven to 325°F.

In a bowl, mix all base ingredients until well combined. Scoop a heaping tablespoon of the mix into 8 muffin liners, pressing down evenly. Bake for 8-10 minutes. Remove from oven and allow to cool.

In a bowl, mix all base ingredients until well combined. Pour into each muffin liner over set base. Return to oven and bake for 15-18 minutes, ensuring the centre of each cheesecake is set (barely jiggles). Allow to cool and refrigerate for minimum 1 hour.
